Chef Josh Castillo
Chef Josh Castillo began with the Plums Inc. company in 2011, after years of holding various culinary positions in the kitchens of the South Carolina Lowcountry. A remarkable talent, with razor sharp management skills and a flare for any and all things innovative, Castillo has found his home making exceptional cuisine, combining the love of cooking instilled in him as a child with the skill set demanded from one of Beaufort, SC’s most beloved restaurants – Plums Restaurant.
Trained in multiple cuisines, Castillo’s attention to detail and natural talent and enthusiasm led him to several opportunities to train under renowned regional chefs such as David Tolerton and Paul Wade and even celebrity and nationally renowned Chef Tyler Florence.
Castillo sees his work as a means of artistic expression. There’s not much more he’d rather do that amaze customers with new tastes, flavors and scents, and plans to continue doing so, while maintaining the key elements that have made Plums a staple in Beaufort for over 23 years.
